Born in Estonia, Sven is a passionate lover of saké, especially for the funkier stuff. The former Okra Hong Kong bartender’s crazy personality doesn’t stop at his taste in sakés.. you’d never guess what tattoo this self-proclaimed "Saké Boyy" got during a drunken stupor in Bangkok!
But Sven has got a serious side to him. He once set out across Japan to study saké production, source new products and was even an apprentice of various Japanese chefs.
Sven would describe his approach to saké pairing as unconventional, leaning towards creating new flavour profiles through full-bodied sakés instead of pairing complementary flavours and aromas. For the saké lovers dining at MORI and The Straits Parlour, expect more Ginjos instead of Daiginjos.
